Imponderables: Soft bread get hard while hard starched like crackers get softer when stale



staling bread is a perfect example of reversion to the mean. Bakery engineer Simon Jackel told Imponderables that the typical soft bread contains 32 to 38 percent moisture. If the bread is left unwrapped and exposed to the elements, it will become hard when it drops to about 14 percent moisture.

So, do keep your bread properly to maintain the moisture quality ..:)
